BEER RECIPE: Amber Onion Soup




Soup Ingredients:
22 ounce bottle of Amber (We used Alaskan Amber)
2 quarts beef broth (use good broth, not cheap canned stuff)
2 XL sweet onions, chopped to your size preference
1 red onion, chopped to your size preference
1 tbsp olive oil
½ shallot, coarsely chopped
1 large clove of garlic, chopped
1 tsp rosemary
½ tsp thyme
2 tbsp onion powder
Sea salt and cracked black pepper to taste


Topping Ingredients:
1 baguette (any kind—you choose)
Olive Oil
Garlic powder
Cheese


In large stock pot, heat olive oil on medium heat. Add onions, shallots, and garlic. Lightly sauté for 2 minutes. Add beer. Simmer for 10 minutes. Add broth, rosemary, thyme, and onion powder. Bring to a boil on high. Cover and boil for 10 minutes. Reduce heat to medium/medium low (maintain simmer). Cook for about 1 hour, until onions droop over sides of ladle when stirred. Taste, and then add as much salt and pepper as you feel it needs. Also consider adding more onion powder, depending on your preference.


To make the bread/crouton topping:
Slice your baguette into 1 inch thick slices. Arrange lying flat on cookie sheet. Lightly drizzle with olive oil. Sprinkle with garlic powder (and pepper if you wish). Heat under broiler until toasted. Don’t walk away or they will burn. You’ve been warned. Drop crouton into soup, top with cheese of your choice. We happened to have shredded cheddar on hand so we used that. You could use a slice of any type of yummy cheese…Swiss is the traditional but feel free to experiment!

Well hello…

Well hello, this is The Beerfather. This blog is all about anything beer related and it’s all from The Beerfather’s perspective. So, you’re probably asking yourself, who is this guy and why does he call himself a “Beerfather”?? What is THAT about? Since you asked… it took many years to become The Beerfather. Years of dedication to the practice and art of drinking and brewing beer. You have to absolutely love everything about beer…be willing to completely give yourself to beer. You may say, well, I love beer a whole lot too! Can’t I have a nifty blog and call myself The Beerfather too? Um, no. Are you willing to give up food for beer? Would you lose all your arms and legs for beer? Would you go blind for beer? Would you go deaf for beer? Would you sell your soul to the devil, just to have one more glass of beer? Most likely your answer is no. However, my answer is a big hoppy YES and that is what classifies me as The Beerfather.

So now you’re probably wondering why the heck this Beerfather dude thinks he needs a blog. For starters, I have an almost creepy obsession with any and all things beer related, and I have WAY too much time on my hands. Combine that with living in what I feel is pretty much the beer capital of the US if not Earth (Portland, Oregon), being a dedicated home brewer, and having one thousand years of beer drinking experience behind me (yes, one thousand. I’m so advanced you can’t even comprehend it. They’ve written books about me. What books? Oh, lots. I just can’t name any because I’m one thousand years old and my memory is shot) …and endless other reasons (because this sentence is getting too long) and you have the recipe for what I think makes me The Beerfather.

So, this blog is a way to make my obsession a productive one that might be interesting and helpful to other beer lovers. I feel it’s my duty to take you under my wing and show you the world of beer as it should be seen.
